Chocolate Banana Tart
you can't see it, but this has a circle of chocolate puff pastry under the bananas. the bananas have sugar on them and were caramelized with a blow torch. it is plated on chocolate sauce. there was also peanut butter praline ice cream, but it was too soft (it was really hot and the freezer was not cold enough) when we plated this. i ate some later, after it was frozen in a different freezer, and it was good.
Chocolate Napoleon
three layers of chocolate puff pastry, filled with creme d'or. creme d'or is 50% chocolate and 50% whipped heavy cream, and i do not see any way to go wrong with that. the top is ganache with white chocolate lines.
this was delicious, but a lot of chocolate, even for me. i had to take breaks so i could keep eating it.
