Day 22

Fruit Gallettes

these are puff pastry folded up around fruit compote.



there is a strawberry compote with a little balsamic vinegar and a fresh peach compote.



Conversations

i think this is a funny name for a dessert. these are puff pastry shells filled with almond cream. there's royal icing on top, decorated with puff pastry shapes. the whole thing is assembled then baked.



this is the inside of a conversation. these were especially nice when they were warm.


Papillons (and Escargot)

papillon means butterfly, and you can see the ones that are four strips of puff pastry twisted together to look like butterflies.

but i like these cookies so much that i don't like to waste the scraps. i rolled them up to make snails.



Poires en Cage

these have a base of puff pastry covered with a little almond cream (of course) and toped with a sliced, poached pear. then a lattice is put over the top and decorated with puff pastry leaves. the whole thing gets baked.



delicious.
