Just a Litte More Chocolate

on the last day of the first level of chocolate, we had a written test but no practical test. we made a cake.


this is a queen of sheba cake, which is flourless chocolate cake. i honestly can't remember what it tasted like. it is glazed with chocolate, the sides are lined with chocolate tiles that we decorated and cut previously. the glaze on top is not supposed to look like that. we let the glaze get too cool before we did the skewer thing.



we also made chocolate bricks with our initials on them. that's mine with the chocolate of questionable temper-- e j g. jason's has a cute duck with eggs and peter's has skulls.







the back of mine had some weird sky patterns.


these pictures are upside down because i was taking them by standing in front of the bricks and holding my camera over.

Chocolate Candy Stand

we had two days to make our chocolate candy stand, and at first i was very stressed out (surprise) and felt very behind and like i would never finish. but then i ended up having a lot of time left, and i kept adding things. i took a lot of pictures. i was really excited and happy with how it was turning out, but i was also afraid it would fall apart at any moment. it didn't though.


this was it the first time it was finished.





the ringmaster's coat broke, but the arm of it is reattached with chocolate. it looked ok as long as you didn't get too close.





the candy bowl had a circus decoration piped on it before it was molded. later i stuck some little loop decorations around the base of it.



the elephant base was set on acetate to be shiny, and his ear was set on parchment to be matte. i added his eye and tail later.





the monkey lost an arm in a tragic accident. i made him a prosthetic (piped) one and stuck it on.



you can see the base in this picture. the white chocolate is supposed to be like a circus ring. it is a little messy, but it didn't work how i thought it would.

Chocolate Candy Stand-- Part 2

this is the second time it was finished.


i added some wavy little flags. very festive.




at some point i gave the ringmaster a stick and a hoop.



i should have cut the tip smaller on my cornet of white chocolate so i could have a finer detail.


i filled the bowl full of candy.





the white ones are chocolate covered candied almonds rolled in powdered sugar. the square ones are carrees, which taste like the most delicious kit-kat ever. and the other ones are the rochers.







this is a picture of the back. it looks pretty much the same.





there were a lot of good projects in my class. there were masks, leaves, pineapples.


there were stars and a scale.




Chocolate Candy Stand Design

our chocolate candy stand had to be at least 6 inches tall and had to weigh 900 to 1500 grams.

i made some drawings and templates, but then i decided to put some of them together to see how i thought they would work in chocolate.


it was a circus theme with a trick elephant and a little ringmaster.

One Million Pounds of Chocolate

i made some chocolate flowers.




and i tried to make a chocolate bow, but the paper got all stuck and the loops broke. and in the end, it just looked like this.


i liked the flowers better anyway.



i also made a chocolate box. it had trees and flowers on it. we made a lot of orange chocolate truffles and put them inside. i ate a lot of not-quite-finished truffles.



i stuck the flowers on top of the box.


and i made some leaves for the flowers.



and i took a lot of pictures because i was afraid i was going to break it before i could show anyone.




we also made a lot of candy.


these are rochers. that means rock, because they look like craggy rocks.


they are piles of roasted almonds with powdered sugar and candied orange peel all covered with milk chocolate.






i ate a lot of candy for a few days, but then there was so much chocolate that it stopped looking like food. the next thing to do was to design a chocolate candy stand using this bowl shape.


the candy stand had to have an elevation and had to hold the candy we had made (and managed not to eat).
