Day 23

Jalousie

this one is supposed to look like a window blind.


the filling is alternated almond cream and raspberry jam. (yum.)



Tarte Tatin

one more apple tart. the apples are cooked and caramelized and flambeed in a frying pan. then that is cooled down and a disk of puff pastry is put on top. the whole thing is cooked in the oven still in the frying pan. then when it is done, you flip it out.


the frying pan was heavy, but i was pretty sure i was strong enough to flip it onto the cutting board. i don't need any help, right? i got kind of stuck mid-flip, and a lot of the caramel poured on the table. this was really sweet and was good with creme fraiche (and greek yogurt at home).


Pithivier

this is also a king's cake, but i've never seen a king cake even similar to this in new orleans. it is supposed to look sort of like a carriage wheel. it is full of frangipane, and there is supposed to be an almond stuck in there somewhere (like the plastic baby). i forgot the almond.


Vol au Vents

we made these a few days before, and filled them with a goat cheese filling on this day.




Finger Update


in case you couldn't tell how much i burned my fingers making croquembouche, here's an update.


(since i'm writing this in the future, i can tell you that those dark spots on my fingernails separated from the skin underneath and are now white.)

i got a blister volunteering, too. it's on the same hand. i got it cutting approximately one million giant parsnips.
