Chocolate #3

this was our last unit on chocolate.

we made a bunch of chocolate candy that i forgot to take pictures of.

we made bonbons. you line the mold with chocolate, fill it, then cover the bottom with chocolate.

these are orange/gran marnier chocolate ganache truffles that i made, but everyone made different flavors. i liked these, but i really really liked the pistachio cinnamon bonbons.



we made a two tier chocolate raspberry mousse cake. the top layer is wrapped with a chocolate basket weave. this is made by cake combing and piping chocolate on acetate then wrapping it around the cake before it sets.



the bottom layer is wrapped in white chocolate that has been painted with cocoa butter colors. part of it is a mattisse painting, and part of it is just boats.





the top has modeling chocolate roses. modeling chocolate is made from chocolate and corn syrup, and you can shape it like play-dough or marzipan.




we got to make up our own bonbon, and i decided this was a good time to experiment. i made a dark chocolate ganache with red bell peppers and red pepper flakes. i liked it ok, but it was probably a little too spicy. i also had to warm people before they tried it.



(this is in parenthesis because this just happened in the middle of the chocolate unit-- i took a tour of the food network. it was a little cool, but mostly just inexplicably boring.

our last chocolate project had a "things found under the sea" theme. (our chef likes things that are funny.)




i made a sunken pirate ship with a pirate skeleton.




this is all made out of chocolate. there is an oyster with a pearl.



and he has a treasure chest, of course.




the back of the boat says "don't drink and drive". it's a subliminal message.



there's a school of fish.






the boat has chocolate brushed on it to look like wood.











i like the skeleton's teeth.




this "submarine sandwich" makes me laugh my pants off.




there are some of the other ones from my class.
