Day 9

Tarte aux Noix

that means nut tart.



to impress chef christopher, make paper dolls. to blow his mind, make them in a circle.



this tart has a thin layer of raspberry jam (thinned with framboise) in the bottom, covered with a single layer of sliced, roasted almonds then topped with a mixture with hazelnut and almond flours that's lightened with a meringue so it souffles in the oven. amazing. and cute.


Lemon Tartlettes

these are just lemon curd in a shell with some swiss meringue decorations and some candied lemon peel we made. the most important part is that we got to use the blow torches.
i made a prettier one, but i gave it to the dean.
